Preheat your oven to 375°F (190°C).
In a large bowl, mix ground beef, bread crumbs, egg, onion powder, garlic powder, salt, pepper, and ketchup until well combined.
Press the meatloaf mixture into the bottom of a greased 9×9-inch baking dish.
Spread mashed potatoes evenly over the top of the meatloaf layer.
Sprinkle cheddar cheese generously over the mashed potatoes.
Add crispy bacon bits on top of the cheese for that extra flavor kick.
Bake for 25-30 minutes, or until the cheese is melted and bubbly.
Allow to cool slightly, garnish with chopped parsley, and serve with a smile!
Leftover casserole can be covered and stored in the refrigerator for up to 3 days.
This casserole can be frozen for up to 3 months. To reheat, thaw in the refrigerator overnight and bake until heated through.
