Ingredients

Scale
  • For the Rösti Pancake Base:
  • 1 kg potatoes
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • For the Toppings:
  • 300 g Raclette cheese, grated or thinly sliced
  • 150 g cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 100 g ham or bacon, cooked and crumbled (optional)
  • Fresh herbs, like thyme or chives, for garnish

Instructions

Step 1: Prepare the Potatoes

Peel and grate the potatoes. Use a clean dish towel to squeeze out the excess moisture from the grated potatoes. Season the grated potatoes with salt and pepper to taste.

Step 2: Cook the Rösti Base

In a large non-stick skillet, heat 2 tablespoons of olive oil over medium heat. Add the grated potatoes to the skillet and spread them evenly to form a pancake shape.

Step 3: Achieve Crispiness

Cook the potato pancake for 10-12 minutes on each side, ensuring it turns golden brown and crispy. Once done, slide the Rösti base onto a baking sheet.

Step 4: Preheat the Oven

Preheat your oven to 200°C (392°F).

Step 5: Add Toppings

Top the Rösti base with 300 g of grated or thinly sliced Raclette cheese, 150 g of halved cherry tomatoes, thinly sliced red onion, and optional crumbled ham or bacon.

Step 6: Bake

Place the baking sheet in the preheated oven and bake for 10-15 minutes or until the cheese is melted and bubbly.

Step 7: Garnish and Serve

Remove the Rösti Pizza from the oven. Garnish with fresh herbs like thyme or chives, then slice into pizza-style pieces to serve.

Notes

Potato Variation

You can use a mix of starchy and waxy potatoes for a different texture in your Rösti.

Cheese Alternative

If Raclette cheese is not available, you can substitute it with Gruyère or Emmental cheese for a similar melting quality.

Serving Suggestion

This dish pairs well with a simple green salad or a light dipping sauce to complement the rich flavors.

Storage

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven for the best texture.
