Preheat your oven to 425°F (220°C).
In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a boil.
In a mixing bowl, combine 4 cups of all-purpose flour, 1 packet of instant yeast, and 1 tablespoon of sugar. Gradually add in 1 1/2 cups of warm water and mix until a dough forms.
Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
Place the kneaded dough in a lightly greased bowl, cover it with a towel, and let it rise in a warm place for about 30 minutes or until it doubles in size.
After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, then shape it into a pretzel.
Once the baking soda solution is boiling, carefully place each pretzel into the water for about 30 seconds, then remove and drain on a cooling rack.
Place the boiled pretzels on a parchment-lined baking sheet, sprinkle with coarse salt, and bake for 12-15 minutes until golden brown.
Remove the pretzels from the oven and allow them to cool slightly before serving.
If the dough is too sticky, add a little more flour until it’s workable but still soft.
